Besides eating some bomb food, the past few days since Sunday have been pretty uneventful aside from dozens of job applications and several interviews.  I had an interview with a marketing company and got a callback within a day for a second interview.  Unfortunately, after they discussed the compensation for the position, I turned them down, but John and I are still diligently applying hoping that something better comes along!

Aside from our boring job search, I’ll tell you about the fantastic food that we’ve had this week!  On Sunday, complements of Yiayia and Papou’s Easter gift to us, John and I had an amazing Greek Easter dinner even though we weren’t in New Jersey with the family.  John got dolmathes (stuffed grape leaves) to start, while I enjoyed a delicious appetizer of spanakopita (spinach pies).  We each got a refreshing salad, and for dinner John ordered pastitsio (a Greek lasagnia-type dish), and I ordered one of my favorites, mousaka (look it up on Google, I’m not sure how to explain it except that it’s delicious and has meat, eggplant, and potatoes).  Although the food wasn’t as good as Yiayia’s (props to her for always cooking unbelievable food!), we had a great time enjoying our fabulous dinner and celebrating Greek Easter together!

On Monday, John and I checked out an amazing seafood restaurant called Blue Water Seafood Market & Grill.  I had originally been looking on Yelp for a fish market to buy some shrimp for a recipe that I wanted to make for dinner, and in my search I stumbled upon this gold mine!  John ordered a swordfish sandwich, and I ordered one with halibut.  We decided that we couldn’t pass up the opportunity to try one of their fish tacos, so we shared a tilapia taco.  The awesome thing about this place is that they catch the fish fresh, filet it in their store, never freeze the fish, and not only prepare food with the delicious filets, but also sell the fish to the public.  I took a picture of some of their selection in the refrigerator so you can see firsthand how awesome this place is!  I can’t wait to buy ingredients to make a fish recipe so we can go back there and get some fresh filets!

Anyways, aside from our good restaurant experiences and constant applications, not much else has happened since Sunday.  John and I are enjoying every beautiful day, and on a side note, our California drivers licenses came in the mail!  How fun and exciting!
